This lovely salad is really mouthwatering , spicy, a bit sour and succulent ,really nice combination for your special occasion.

Am get it from my Collegue Chef in my work place .  Thanks for this healty and appetizing Salad.

Recipe

Ingredient
Papaya                                       500 gr
Carrot                                        200 gr
Cucumber                                 100 gr
Spring Onion                              50 gr
Red Onion                                  50 gr
Capsicum Three Colour             50 gr each
Cut all Julliene ( very thinly slice ).

Dressing
Sambal Oelek                             100 gr
White Vinegar                              20 ml
Fish Sauce                                    10 ml
Garlic                                           10 gr
Onion                                           25 gr
Lemongrass                                   5 gr
lime leave galangal                       5 cm
lime juice                                     10 ml
oyster sauce                                 10 ml
tom yam paste                             10 gr
Jaggery Sugar                              10 gr

Blend it and mix it well together , seasoning as your preferance and put in the bottle for later use.

Thank you so much for my mom , this is the classic home cooking style . Am always remember the taste , is so yummy.

here is the recipe
Chicken Whole 1500 gr ( cut into 10 Pcs )
Onion                                                100 gr
Ginger                                                 25 gr
Garlic                                                  50 gr
Turmeric                                              25gr
Red Chilli                                            50gr
Coriander Seeds                                   10gr


Galangal                                               peeled 20 gr
Lemon Grass                                                    20 gr
Coconut Milk                                                 100 ml
Jaggery Sugar  ( much better that brown sugar )    50 gr
Tamarind Juice                                                        25 gr
Potato                                                                      50 gr

- First saute the coriander seed until the flavour comes out, blended the onion, gingerm garlic, turmeric, red chilli. Put set A side.
- Saute all the mixture paste until cook , add the coriander seeds, galangal and lemon grass, let it cook for a while . And the put the Chicken.  Stew it until nearly half cook, and put the coconut milk.
- Mix the jaggery sugar and tamarind juice, after that put into the chicken let it cooked properly , seasoning. Cut The potato into wedges and marinate it with salt , papper , some herbs and deep fry for 5 miniutes
- Prepare grill or Pan Grill . and grill the chicken , basting with the sauce set a side .
- Sauted potato and deglaze it with sauce ... set arrange in the plate and put the chicken on the top of it.
- Garnish it with Thinly and cruncy red chilli, spring onion and coriander.

Have you ever experience there is almost nothing left in your fridge except, Thai jasmine Rice, egg, onion, and Spanish Tuna chunk can in oil ,

Lets have a try with this one, Spanish Tuna , Chilli Fried Rice with sweet soya sauce


Here the Recipe:

- Thai Jasmine Rice                          180   gr
- Onion / Shallot                                  50  gr
- Small red chilli                                  30 gr                            
- Salad oil                                            70  ML ( the caracteristic of this fried rice should a bit oily )
- Spanish Tuna Chunk                         80  gr
- Sweet Soy Sauce                               10  ML

Simply drop off the oil to the pan, let it hot and start it with chopped onion, thin slice small red chilli ( this spicy of chilli is more intense than a big one ), and tuna chunk. Let it toss until medium ( not over cook it ), drizzle some salt, n put the cold Thai Jasmine rice ( it is necessarily to use cold rice because it will make seperate and nice fried rice, not the sticky one ). Stir it gently the rice and all ingredient until well mixed, drizzle sweet soya sc , make sure the colour just a bit brown. and walllaaaaaaaaa............. ready to serve.

only 15 minutes to prepared if you have already made the Thai Jasmine rice.
